Potatoes carbonara are a very simple and tasty dish, that is perfect when your fridge is almost empty (in Italy we say it “cries”!). Indeed, in order to make it, you only need few ingredients that we all have at home (eggs, potatoes and pancetta cubes). But I assure you that when you combine them you obtain a really great mix of flavours!
In addition, i like eggs sooo much! If it were possible, I would eat them for breakfast, lunch and for dinner!!!
The idea at the basis of the dish is very similar to that of “pasta carbonara“, that is to say, a farinaceous element, in this case potatoes, combined with eggs and guanciale (smoked lardon).
Potatoes carbonara are a complete dish that you can taste for a perfect brunch.

Ingredients for 4 people:

700 g of potatoes
3 eggs
200 g of guanciale or smoked lardons/pancetta cubes
EVO oil
Salt and pepper
1 tablespoon grated Parmesan cheese


Peel the potatoes and cut into small cubes (about 1.5 cm/0.5 inch).
Rinse well to remove excess starch and pat dry.
In a skillet, heat a little extra virgin olive oil and add the potatoes.
Cook over medium-high heat until golden brown (about 15 minutes), then place on paper towels and season with salt.
Remove excess oil from the pan, heat it up again and brown the smoked lardons.
Add the potatoes and a little oil and cook.
In a bowl, beat the eggs with grated Parmesan cheese, a pinch of salt and pepper.
Add the eggs, mix well, after 30 seconds, turn the heat off.
Serve potatoes carbonara in small portions or put them in a big bowl and place it at the center of the table, in order to allow your guests to serve themselves.
