It looks like my house has become a hospital!
My husband was sick, my daughter has high fever…when everybody in the family is sick it is a total nightmare!
As you can imagine, with a sick kid at home, I did not have time to spend cooking and creating…then I thought that involving her in the cooking process would be a smart idea, so we prepared some baked pistachios chicken skewers: simply delicious!
Approximately 1 hour before the baking time, I left the chicken to marinate with lemon and herbs such as sage, thyme and oregano: this process made the chicken more tender and tasty.
My daughter enjoyed cooking with me, we had some fun together and we forgot she was sick!
Here is the recipe!

Pistachios chicken skewers

Pistachios chicken skewers

  • Chicken breast (whole) 1
  • Lemon ½
  • Pistachios (coarsely chopped) 100 g
  • Bread crumbs 2 tbs
  • Herbs 1 tbs
  • Salt
  • Pepper
  • Extra Virgin Olive Oil


Eliminate all the fat and cut the chicken breast into pieces, not too small.
Put them in a bowl and season with lemon, a drizzle of extra virgin olive oil, herbs (sage, thyme, oregano etc) and salt.
Stir well using your hands to combine, cover and allow it to rest in the fridge for 1 hour.
Mix the chopped pistachios with the bread crumbs.
Cover every single chicken piece with the mixture and stick in the skewers.
Grease your hands with some oil, grease the chicken and cover with a second layer of pistachios and bread crumbs mixture: this allows the skewers to be more crunchy.
Prepare a baking tray with some baking paper, drizzle the skewers with extra virgin olive oil and bake at 200° for 10-12 minutes.
You can serve the pistachios chicken skewers as the main dish, accompanied by a fresh salad.
