Chicken and vegetables fried rice is an eastern-style dish that people normally taste at the Chinese Restaurant.
I like Asian food sooo much, I love soy sauce…I think in a certain way I am dependant on eastern-food 😀 ! When I was at university, I ate it at least once per week! I remember that, when I lived alone in Palermo, studying all the day for my exams, the “Chinese dinner” was the best moment of the week!

Now I prefer cooking oriental food by myself than ordering it at the Chinese restaurant 😉 . In this way, I am sure to eat a homemade wholesome meal!
You can serve chicken and vegetables fried rice in small portions combined with other oriental food or prepare it as a main course.

Chicken and vegetables fried rice

Ingredients for 4 people:

300 g basmati rice
300 g whole chicken breast
1 large carrot
1 bell pepper
2 spring onions
1/2 curly cabbage
Dark Soy Sauce
Dried ground Ginger


Prepare the ingredients:
Peel the carrot and cut into matchsticks.
Wash the pepper, remove the seeds and pith inside and cut into strips.
Cut the cabbage into strips and wash well.
Remove the outer layers of the onions and cut into rings .
Cut the chicken breast into chunks removing any bones and fat.
Cook the basmati rice in plenty boiling salted water for nine minutes and drain.
Meanwhile, stir fry the onions in a wok with extra virgin olive oil and half a tsp of dry ground ginger.
Add the chicken and brown.
Add all the remaining vegetables, sprinkle with soy sauce and cover for a few minutes to soften.
Remove the lid and continue cooking over high heat for 5 minutes.
Add the rice and cook with the vegetables for 5 more minutes pouring some more soy sauce.
If necessary, add a pinch of salt and serve.
