Puff pastry is one of the most versatile dough base: it is perfect for the preparation of both sweet and sour dishes.
Until now, I had never prepared puff pastry at home because I knew about the difficulty in making it: every cooking book talks about puff pastry as something extremely difficult to reproduce, with long timing preparation…they always scared me!
Actually: I did not find it so difficult to make, just a little bit long in preparation because you need to put it in the fridge and, every 15 minutes, knead it again…but, now that I know it, I usually prepare a little bit more of it and I keep my puff pastry in the freezer, ready to use any time I need it. It is much better than the puff pastry we buy at the supermarket and, trust me: it is really delicious!
Puff Pastry recipe
200 g all purpose flour
200 g butter
A pinch of salt
Firstly, mix the flour with salt and water and knead until it become a smooth and homogeneous dough.
Cover with a damp cloth and allow it to rest for 15 minutes.
In the meanwhile, use the top of your fingers to knead the butter untill it becomes the same consistency of the dough.
Take the dough out from the fridge and roll it to a 1 cm thick: it has to be twice bigger than the butter dough.
Put the butter on half part of your dough and close it, rolling with the rollling pin.
Allow it to rest for 5 minutes, than fold the dough and roll with the rolling pin in one direction first, then in the other.
It is time to put the dough in the fridge for 15 minutes; after that, you need to refold it again in one direction first, then in the other. Put it again in the fridge and repeat this process other 4-5 times.
Yuor Puff Pastry is ready now! Use it to prepare desserts or sour dishes and keep in the fridge the dough you do not use: it will be ready for your next creation!
It usually takes 15 minutes to cook in the oven (200°). This may vary according to the recipe.
