Dear followers, today I would like to propose you a vegetarian dish that you can prepare for lunch or for dinner: a delicious melting kale and potatoes pasticcio! 😀
Melting kale and potatoes pasticcio is a tasty complete meal, absolutely great: both adults and children appreciate it!
I normally prepare this pasticcio adding a crunchy note (almonds) and delicious stringy cheese (gruyère or fontina), but you can personalize it as you want.
I like so much kale, it is healthy and with a strong and unique taste: yummy! I have to admit that its smell is not as delicious as its taste, but unluckily nobody is perfect! 😀
You can prepare it if you have vegetarian guests, or just to eat something different.
Preparation is very simple, follow my few advices and that’s it!

Melting kale and potatoes pasticcio

Ingredients for 4 people:

1/2 green kale
500 g of potatoes
250 g of Fontina or Gruyère cheese
100 g of roasted almonds
EVO oil
Salt, pepper

Directions:

First of all, prep your vegetables: peel the potatoes, cut them into sticks and rinse well.
Cut the kale into strips, rinse and dry thoroughly.
In a pan, heat 4 tablespoons of extra virgin olive oil and add the potatoes.
Sauté for ten minutes, then add the kale and soften for a few minutes.
Transfer the vegetables in an oven dish, add salt and pepper and mix well.
Bake at 200C/400F/Gas mark 6 for about 20 minutes, stirring halfway through cooking.
After this time, remove the dish from the oven, add the almonds, mix well, sprinkle with grated cheese, put in oven for further 2-3 minutes and serve.
Enjoy your melting kale and potatoes pasticcio hot with bread.
