Today I want to explain to you the Lady’s Kisses recipe. Lady’s kisses, or “baci di dama”, are delicious short pastry biscuits enriched with almonds flour and put together with dark chocolate.
I prepare them very often, because my daughter (not only her!) is crazy about these biscuits!
Lady’s kisses were born in Piemonte. There are different varieties of baci di dama: with nuts flour or with cocoa, but my favorites are the classical ones!
They are perfect for a coffee or for a tea break with your friends 😉
Lady’s Kisses recipe
Makes about 30 kisses:
150 g plain flour
150 g almonds
150 g butter
A few drops of vanilla extract
80 g dark chocolate
Place the almonds with sugar in a kitchen robot and grind into fine flour.
Cut the butter into small pieces and let it soften at room temperature.
Add the almonds, flour and a few drops of vanilla extract to the butter and work with your hands until the dough is smooth .
Wrap in cling film and leave in the fridge for 30 minutes.
Roll the dough into ropes and then cut into many small pieces.
With your hands, roll every tiny piece into a ball and place them on a baking tray lined with parchment paper, making sure you leave some space between them.
Cover with cling film and refrigerate for further 30 minutes.
After this time, bake in preheated oven on static mode at 160C/320F/gas mark 2 ½ for 20 minutes, then leave to cool.
Melt the chocolate in a double boiler, let it cool slightly and then, with a spoon, put a small amount on the flat side of the cookies and overlay another half.
Let the biscuits stand until the chocolate cools and becomes solid.
