Farmer’s Skewers are very tasty skewers made with “carpaccio”(thinly sliced beef meat), “guanciale”, a sort of bacon very used in Italy – if you do not find it in your country, you can use normal bacon – and provolone cheese. They are covered in breadcrumbs and then roasted: really great!
I have seen some skewers like these at the supermarket, and I have tried to re-make them at home.
They are simply delicious and so easy to prepare!

Well, cut the chatter, let’s see the recipe!
Ingredients for 6 skewers:
200 grams of carpaccio (thinly sliced beef meat)
150 grams of guanciale (or bacon), thinly sliced
150 grams of Provolone cheese, thinly sliced
Breadcrumbs to taste
Extra Virgin Olive oil
Salt, black pepper
Prepare an emulsion with Extra Virgin Olive oil, salt and black pepper.
Lay a slice of carpaccio on a chopping board and brush it with the emulsion.
Cover the meat with a layer of guanciale and with one of provolone cheese.
Roll it all up in a cylinder, wrap it in cling film and place in a refrigerator for about 30 minutes.
Do this with all the slices of meat.
After about 30 minutes, remove the meat from the film and with a sharp knife cut it into disks, about 2 cm thick.
Skewer several rolls with each skewers , making sure you take all the layers.
Cover the skewers in breadcrumbs.
Heat a grill pan and roast the skewers 2-3 minutes per side over high heat (carpaccio is very thin so the meat will cooked very quickly).
Serve the farmer’s skewers very hot.
