Coffee mousse is a fresh dessert very easy to prepare. You can make it in advance and keep it in the freezer.
I enriched it with chocolate chips, that give a crispy note to the dish. In addition, I completed it with an appetizing caramel sauce.
It is perfect after a special lunch of dinner: it will conquer both your guests and you!!!
Coffee mousse with chocolate chip and caramel sauce is also a pretty dessert. I used ring-shaped little moulds, but you can also use muffin moulds 🙂
Coffee mousse with chocolate chips and caramel sauce
Serves 4 to 6 people:
For the mousse:
100 ml of coffee
4 g of gelatine leaves
200 ml of double cream
3 egg yolks
70 g sugar
30 g chocolate chips
For the caramel sauce:
50 g sugar
50 ml double cream
Soak the gelatin in cold water for 10 minutes.
Pour the coffee and sugar in a saucepan and cook until the sugar dissolves completely.
Whip the egg yolks with a whisk and add the coffee syrup slowly.
Take 2 tablespoons of whipped yolks and place them in a saucepan with the squeezed gelatine leaves.
Turn on the heat and stir constantly until the gelatin is dissolved completely.
Pour the eggs with the gelatin in with the rest of the yolks and stirr.
Whip the cream. Add the eggs to the cream. Place in the refrigerator for an hour.
After this time, remove from the fridge, whisk the batter again, add the chocolate chips and pour into the moulds.
The mousses need to be kept in the freezer for at least 4 hours before serving.
Remove the mousse from the moulds and place on plates.

Garnish the mousse with caramel sauce and serve.
