Guess how much I love cooking with my chipmunk?
Cooking with kids is therapeutic: it is unbelievable how do they concentrate and calm down if you allow them to mix a dough! One of Vittoria’s favourite things is making fresh pasta and, because Carnival is arriving, we prepare a colourful fresh pasta together and we called it “Carnival pasta”.
The colours come from veggies: spinach for green, tomato for red and red cabbage for purple.
We have seasoned it with butter and sage but you can personalise your sauce as much as you like!
In this way, you will make your kids eating veggies with fun and avoiding any kind of tantrum…trust me!

Ingredients for 4 people:

White dough:

40 gr di flour 0 (I used the Italian “semola rimacinata”)
40 gr plain flour
pinch of salt
Water

Red dough:

40 gr di flour 0 (I used the Italian “semola rimacinata”)
40 gr plain flour
pinch of salt
50 ml tomato sauce

Green dough:

40 gr di flour 0 (I used the Italian “semola rimacinata”)
40 gr plain flour
pinch of salt
50 gr fresh spinach
Water

Purple dough:

40 gr di flour 0 (I used the Italian “semola rimacinata”)
40 gr plain flour
pinch of salt
50 gr red cabbage
Water

For the sauce:

40 gr butter
Fresh sage
40 gr grated parmesan
Salt, black pepper

Preparation:

White dough:

In a bowl, mix the two flours with the salt.
Mix with one hand, using the other to slowly pour the water in, until the mixture becomes uniform.
Mix for 10 minutes; when the dough is smooth create a ball and wrap it with plastic wrap. Allow it to rest in the fridge for 30 minutes.

Red dough:

Mix the two flours with salt and tomato sauce until combined.
Proceed as per white dough.

Green dough:

Wash the spinach and brown in a frying pan.
When cool, mix with the flour.
Put in a bowl and add salt.
Slowly pour the water until smooth then proceed as explained above.

Purple dough:

Chop the red cabbage and boil for 10 minutes in salted water.
When cooked, keep the water and allow the cabbage to cool.
Mix the cabbage with the flour.
Transfer into a bowl and pour the water used to cook the cabbage until the dough is smooth.
Proceed as explained above.

With every dough create little balls and allow them to rest on a floured base.

Melt the butter with the sage.
Cook the pasta for 4-5 minutes then transfer with the butter and cook for other 3 minutes.
Sprinkle with black pepper and grated parmesan and serve.
Buon appetito, your Carnival pasta is ready!
